Breaded Dorado
Ingredients: Dorado Fillets, Garlic Salt, Black Pepper, Eggs
Beaten, Crushed Soda Crackers, Vegetable oil.
Season dorado fillets on both sides liberally with Garlic
Salt and Black Pepper. Dip fillets in beaten eggs. Dip
fillets in crushed soda crackers on both sides. Heat
vegetable oil to 425 degrees, and deep fry fillets til
golden brown. Serve with steamed vegetables and/or rice.
Garlic Butter Dorado
Season dorado fillets in garlic salt and black pepper. Grill
or saute in butter and chopped garlic. Serve hot with a side
of sauteed red, green, and yellow peppers. |

B-B-Q Tuna
Two Tsp. chopped garlic
1/4 cup Olive oil
1/4 cup Soy Sauce
3 Tsp. lime juice
3 Tsp. Italian dressing
Marinate for 60 minutes.
Grill on hot for 5 minutes.
Season to taste with
black pepper. |
Snapper de Daniel
Create a marinade sauce as follows:
1/3 White wine
1/3 Teriyaki sauce
1/3 Olive oil
Marinate in refrigerator overnight.
Season fillets with garlic powder
and black pepper. Sear meat on
grill and enjoy! |

Wahoo
Almondine: 1lb. Wahoo fillets; 2 eggs beaten; 1/2 cup
flour; 1 cup chopped almonds; butter & chopped garlic. Coat
fillets with egg, mix flour and almonds together, pat
fillets in almond and flour mix, melt butter in skillet, add
garlic to skillet, sear fillet in skillet about 5 min. each
side. Serve with fresh, steamed vegetables.
Lime and Basil Marinated Mahi-Mahi: 1lb. Mahi-Mahi
filets; 1Tbsp. Chopped Garlic (per fillet); 2Tbsp. Lime
Juice (per fillet); 2Tbsp. Olive Oil (per fillet); 1Tsp.
Basil (per fillet); Salt/pepper to taste. Marinate fish for
a few hours or overnight in refrigerator. Grill on high for
5min each side, searing juices into meat.

Dorado
Ceviche: 1lb. Dorado chopped and marinated in lime juice
for 2 hours in refrigerator; Cilantro; Chopped onion;
Chopped hot peppers; Chopped tomato; Tabasco or other hot
sauce; Salt and pepper. Drain lime juice after marinating,
add everything to a bowl, mix and serve with saltine
crackers. |
